Convection system

The 30” built-in ovens feature an exclusive Dual Diagonal Convection System. Here two fans with two ring heating elements are positioned in a diagonal set up to maximize the size of the fan blades.

This configuration allows for large air volume circulation while minimizing any air turbulences. A baffle provides airflow guard rails to improving the direction of the airflow and create an optimized heat distribution throughout the oven cavity.

The combined effect of the twin fans, two ring heating elements, the baffle and vents achieves a balanced, horizontally directed airflow for best-in-class even heat distribution, equally benefiting multi level cooking or any high profile foods.

Peripheral vents at the top and bottom of the oven ensure the complete heat coverage of the entire three dimensional space of cavity.

Food stays moist and is prepared healthier as grease particles do not carbonize. When using the oven for more than one dish, the different levels cook much more evenly than in a conventional convection oven. For traditional cooking, such as baking and recipes that require non-convection heat, the oven can be operated with the top and concealed bottom heating elements.

Gas cooktops

Different size gas burners give cooking the versatility and accuracy you need. Bertazzoni’s exclusive dual valve burners in brass provide high-efficiency, from a delicate low simmer to full power (750 –18,000 BTU). The power burner delivers best-in-class heat-up times.

The gas cooktop is based on a high efficiency design. Pots are placed closer to the flame, reaching the boiling point more quickly and reducing gas consumption during the cooking process. GREEN FEATURE

The one-touch, child safety ignition system lets you light and adjust burners with one hand. The safety system automatically stops the gas flow if the flame goes out, even when electrical power is cut.

Bertazzoni’s one-piece worktop molding is best-in-class. With sealed burners, no sharp angles or dirt traps, cleaning is fast and easy. Heavy-duty cast iron grates allow easy movement of any kind of pot. Accessories include stainless-steel teppan-yaki griddle plates, and wok and simmer ring adapters in cast iron.

Induction cooktops

The coil produces a high-frequency electromagnetic field which penetrates the iron or steel pan and generates heat. Heat generation stops as soon as the pan is removed from the element, or it is switched off.

Bertazzoni induction cooktops have output levels of 13,600 watts for fast, efficient boiling and cooking. The variable low-to-high power is controlled electronically.

With induction there is no waste of stored or residual heat, and practically all the energy is used to heat the pan. Also, there is no waiting for elements to heat up; full power is available immediately.

Bertazzoni induction cooktops also feature one of the category leading broadcast ranges. As a result, cookware with slightly uneven bottom sections, will not diminish the advantageous of fast, immediate heat up times.

With their touch-controls, the cooking zones are arranged to make it easy to prepare a wide range of different dishes very quickly with minimal energy output. Special functions include a booster and a pot detection system.

Freestanding Gas ranges with gas convection ovens

This fan-assisted gas convection technology brings extra versatility and precision to cooking.

The Bertazzoni gas convection system featured in all gas ranges models, excels in any type of cooking and food preparation.

Additional settings include dehydration at thermostat-controlled low temperature, and fan-only defrosting. For traditional cooking, such as baking and recipes that require non-convection heat, the oven can be operated with the concealed bottom heating elements. For broiling, the full-width infrared gas grill gives powerful searing and broiling over a large surface area.

The ovens have a large capacity and five rack positions. Multi-level cooking allows several dishes to be cooked at the same time. Two internal lights give ample illumination at each of the levels. Electric ignition operates both oven and grill. Oven doors have at least triple-glass insulation ensuring minimum heat loss, and low temperature external surfaces. Cleaning is easy with the full-screen inner glass oven window and special enamel oven space. Ample storage is provided as standard below the oven in the majority of all gas range models.

Freestanding dual fuel ranges with electric convection ovens

Bertazzoni self-clean electric ovens have nine cooking functions. These include non-convection baking, convection and turbo, combined convection and broiler, and low-temperature proofing and warming modes.

For convection cooking, a ring element heated balanced air-flow with fan ensures even heat distribution for single and multi-level roasting and baking, without flavor crossover. Direct control and immediate feedback of the oven functions is operated electronically, giving precise control of oven temperatures from 100ºF to 500ºF.
The majority of a dual fuel models feature a self clean function. This involves setting the 2½ hour cleaning cycle (850ºF) which reduces all grease, fat and other deposits to a fine dust that is easily cleaned out with a damp clothe or paper towel.

All materials used in Bertazzoni products are ‘migration of materials test compliant’. This means they do not change their composition when kept in contact with common food ingredients such as water and oil.
